Super-Natural Heat Stability from a Vegetable Juice

The pH Problem

Baked goods and many dry grocery products typically are in the 5–7 pH range. During baking or heat processing production, the pH can rise even further. While nature provides us with several red anthocyanin options from fruit and vegetable juices, these sources will shift from red to purple under these pH conditions. That is why formulators searching for a heat-stable natural red food color often look beyond common anthocyanin sources when working in a neutral PH.

The combination of market demand, like the Starbucks example, with growing consumer demand for natural color sources drove our R&D team to develop a solution to the heat-stable red challenge.

After several years of hard work, we have a solution—a natural vegetable juice that delivers bold, vibrant red shades that stand up to heat in a neutral pH environment. We call it SupraRed™, and it provides a number of key advantages including the following:

Sensient’s diverse beet portfolio is crowned by UberBeet™, a suite of optimized beet-based natural red solutions.

The UberBeet™ range includes SupraRed™ as well as Magna Ruby™ and Grand Ruby™, all offering enhanced stability and performance compared to standard industry offerings. UberBeet™ solutions offer excellent options for bold reds in a wide range of applications and flavor profiles.

Frequently Asked Questions

What is a heat-stable natural red food color?

It is a color derived from botanical or other natural sources that maintains a red hue through thermal processing such as baking, retorting, or extrusion. A heat-stable natural red food color resists browning and hue shifts at typical food pH, delivering consistent results in finished products.

How does a heat-stable natural red food color differ from synthetic dyes?

Synthetic dyes often exhibit broad pH and heat tolerance and deliver intense color at very low usage rates, but they are not derived from natural sources. A heat-stable natural red food color provides similar functional stability while meeting clean-label expectations, relying on carefully selected pigments and process technologies rather than petrochemical synthesis.

Which natural ingredients provide heat-stable red coloring?

Options include certain stabilized vegetable juices, specialized extracts designed for neutral pH systems, and proprietary blends formulated to resist Maillard browning. A heat-stable vegetable juice with enhanced thermal tolerance can perform well in baked goods and cereals. In some systems, carotenoid-containing botanicals or optimized blends can also contribute to a stable red shade.

Is beetroot powder a heat-stable natural red food color?

Beetroot powder can provide vibrant red at neutral pH, but it is prone to browning under heat due to the Maillard reaction and can develop off-notes at higher dosages. Therefore, beetroot powder is not consistently a heat-stable natural red food color for baked or extruded applications, though it may work in low-heat products.

Can anthocyanins be used as heat-stable natural red food colors?

Anthocyanins are sensitive to pH and often shift from red to purple in the 5–7 pH range common to many baked goods. While some formulations and processing aids can improve their performance, anthocyanins are not typically the best choice when a truly heat-stable natural red food color is required in neutral pH systems. In these cases, a heat stable vegetable juice or specialized natural extract is usually preferred.
